Chimichurri is an oil based condiment that is from Argentinian origin. The sauce is a mixture of parsley, garlic, organum, salt, chilli and oil. It was made to accompany barbequed meats, as the Argentinians did not like spices on their meat.
So we tried this beautiful sauce for ourselves, and the uses for Chimichurri are endless.....it works on almost everything. And the best news is, that you can make it to suit your own taste buds. With the macadamia oil, it gives a full rounded taste of wonderful buttery-ness.

Here is wat you will need:
1/2 cup finely chopped parsley
1/2 cup macadamia oil
30ml red wine vinegar
2-4 garlic cloves (your choice) chopped finely or minced
5ml red chilli flakes
3/4 teaspoon of dried oregano
salt and pepper to taste
This is what you need to do:
Mix all the ingredients together.....taste and add what you think you will need, be it chilli, salt or garlic.
Enjoy this sauce on pastas, meat or salads......yes, it is this easy....
