Macadamia Oil and Chocolate Brownie Cake

The name is a mouth full, but so is the taste!! If you are a dark chocolate lover, this is just for you.

This brownie cake contains no flour and is so delicious you will not regret baking this grown up cake.


See below how to make this delicious cake....



Here is what you will need:

200g 70% Lindt Dark Chocolate

200g Caster Sugar

125ml Macadamia Oil

Pinch of Sea Salt

5 eggs, separated and room temperature (this is very important)

30g of crushed Macadamias

Icing sugar for dusting

 

Here is how to do it:

 

  • Preheat oven to 180 degrees celcius 

  • Melt all the chocolate in a double boiler

  • Add half of the sugar and stir until the sugar has melted into the chocolate

  • Add the Macadamia Oil in a steady stream while whisking

  • After everything has been whisked, add the sea salt, crushed Macadamias and mix

  • Take the chocolate mixture off the heat

  • Separate the eggs

  • Add the egg yolks one by one while whisking, and remember not to stop whisking until all the egg yolks are mixed in

  • Poor half of the left over sugar into the egg whites and stand to mix with an electric mixer

  • When the eggs are starting to turn white and not translucent, add the rest of the sugar little at a time and mix until the egg whites form soft peaks

  • Now add a little of the beaten egg whites to the chocolate mixture to loosen it up a bit

  • Then fold the chocolate mixture into the eggs whites, be careful not to beat or mix, but fold

  • Put your mixture in a lined baking tin (20/22cm) and bake for 40min

  • Take out the brownie cake and let cool in the baking tin

  • The cake will fall and crack but this is what we want

  • When the cake is completely cooled, remove from the tin and dust with icing sugar

 

This Macadamia Oil Brownie cake is delicious when you pair it with vanilla ice-cream or whipped cream.
